Hippie Food

So ya'll know how much I love the cuisine of my home land Santa Cruz, California.( I lived in callie till I was 14 then moved to Idaho.) I miss the awesome roast beef sandwiches at New Leaf market and the bagels down at the Bagelrey and going to the farmers market next to A&W.....awe the good old days.
The healthy food really makes me feel way better. With me being hypoglycemic and all I really should stick to the complex carbohydrates..... therefore hippie food is perfect! So amid the pizza parties and late night Beto's runs I'm trying to sick to the healthy food I love. I'll try to post some of my favorite attempts at making or finding awesome food.
Here's one: Tangy Basil Brown Rice
So make some brown rice. Cut up some red onions and start em cooking in olive oil. Add some veggies for example: orange and yellow bell peppers, fresh green beans and green onions or ya know whatever you like. Cook those for a while and then season with some basil and other spices . Then add in a big spoonful of Classico brand pesto. Turn off the heat and mix in 1/3 cup of sour cream add a little lemon juice. Mix the saucy goodness into your rice and enjoy.....well at least I like it.

And another: So Tasty It Could Be Pizza Grilled Cheese Sandwich
Cook some bacon (or turkey bacon is even better try to get it lean-ish but... ya know its nasty bacon so just don't think about it to much.)
Cut up mushrooms and fresh basil, slice tomatoes and Colby Jack cheese. Get some crusty french bread and and place veggies, cheese, bacon and a slice of turkey deli meat on bread. Lightly butter bread and toast till warm in a toaster oven or cook in a pan with olive oil....yummy!!!!
